From the Chef:
"Tavern Patrons,
I’m excited to share what’s fresh and thoughtfully prepared in our kitchen this week.
Our feature is a lightly Fried Chicken, perfectly golden brown, served with your choice of mac n cheese, fries, or coleslaw—you can’t go wrong!
To start, enjoy our Trout Rillette: a smooth, creamy spread made with fresh trout, crème fraîche, and chives.
Our soup special is Roasted Red Pepper Soup, gluten-free and vegetarian (contains dairy). Rich and smoky, it brings comforting warmth with every spoonful.
On the side, we’re highlighting fresh asparagus from Apple Castle, simply prepared to showcase its vibrant, seasonal quality.
We invite you to savor these carefully sourced, seasonal dishes crafted with intention—from our kitchen to your table."
Bon appétit,
Chef Matt
From the Bar:
"I’m excited to share some updates from behind the bar.
First up, we’ve added a couple of new reserve reds to our lineup: the bold and robust Contino Rioja 2017 from Spain, and the intriguing Atlante Cabernet Franc 2016 — an unexpected Italian wine made from a French grape. Both are worth trying!
Our Firehouse Red draft will be wrapping up soon, so keep an eye out for its upcoming replacement.
With the warmer weather, we’re streamlining our dessert cocktails. We’re retiring the Pennsyltucky Coffee to focus on just two offerings. Velvet Noir will stay on the menu, but with a twist: instead of whipped cream and orange salt, we’re using a custard cream made from egg yolk, orange bitters, and salt. This change folds those flavors right into the cocktail for a richer, more cohesive experience.
Also, the Banana Rhum Fizz is now our official seasonal fizz. If we talked about it last week, consider this your friendly reminder to give it a try as it rolls out.
Finally, I’m thrilled to introduce our new Cocktail of the Week, Saturn Return, created with Carter. Inspired by the classic tiki drink “Saturn” from 1967, we’ve put our own spin on it—using ginger-infused gin, Amaro Montenegro as a falernum substitute, and finishing it with a float of Empress Gin to evoke Saturn’s rings. The name references the astrological event symbolizing growth, discipline, and creativity within structure—qualities that also guide our craft.
I hope you’ll stop by soon to try these new flavors and celebrate creativity with us."
Warm Regards, Augusitine
